The Albarinho grapes for this wine are sourced from the single Arantei estate at the extreme south of Condado de Tea - where it is the first vineyard in the region to begin harvesting. Harvesting is by hand, with careful grape selection. The grapes are destemmed, undergo a 6 hour cold maceration at 10?C (to add texture to the wine), and are then fermented using natural yeasts in stainless steel at a controlled temperature. The wine is rested on its lees for at least 3 months before bottling, with regular batonnage.
