To the nose the Dom Perignon has an immediate impression of a bright bouquet, with fruity pastel tones which unfold into candied fruit, ripe hay and toasted notes with a small accompany of licorice. To the taste this champagne is round at heart, and whilst drinking reveals itself to be more complex, edgy and silkier than it is creamy. Eventually the whole taste melts into an exquisite bitterness tinged with the briny taste of the sea.
